Nasi Beryani Ayam


Hari ini mood macam hari Jumaat, nak cepat bertemu dengan Weekend. Jadi menu hari ini adalah Nasi beryani Ayam, dengan Kuah dal sayur. Tiada paceri pun, kerana disini tiada yang makan kecuali Daku.
Mama beli beras ini dikedai runcit rumah Bonda. Sekilo $3.50, dan bila dah beli mestilah kena masak atau gunakan beras ini.
Seperti biasa, Mama tidak suka menggunakan banyak warna, setakat kas-kas dan sedikit aje warna kuning itu pun hanya setitik aje...!! Tapi Mama suka bau gajus, raisin dan daun-daun nya sungguh mengharumkan...

Roti Telor & Sos Strawberri



Bila mata dah mengadap tv, kita nak salahkan siapa eh? Siapa lagi kalau bukan si Nigella laaaa...isk dgn baju tidur dia boleh masuk dapur dan memasak... isk..isk.. Kita suka tauuuuu... seronok you....!!
Semalam nampak dia buat Roti ini yg dia kata dia miss donut strawberi tapi dia tukar donut itu ke roti telor ler dan sos strawberi...
Kita pula capai ler pensil dan kertas.. Siap duk bersedia nak jot down resipi nya... Dalam hati kata ..alahai senang nyaaaaa...!!
Tadi pergi pasar beli lah Strawberri korean sekotak $5.65 dollars.. Manis nya Masya-Allah sungguh terpesona.. memang warna nya tidak semerah sangat tapi rasa nya... Fantastik ler....

Okay Kita kasi kongsi resipi nie...Cubalah...

Resepinya:-

1 bungkus roti putih
5 biji telor
3 sudu makan susu segar
1 sudu teh essen vanilla
2 sudu makan icing gula
Minyak dan mentega secukup nya

Cara - cara nya:-

Pukul telor bersama gula, susu dan essen sampai sebati.
Panaskan kuali leper, masukkan minyak dgn mentega sedikit dan celupkan roti kedalam adunan telor dan goreng sehingga dua belah garing.
Angkat dan toskan di kertas serap minyak.

Sos Strawberri

1 kotak strawberri
3 sudu makan icing sugar
1 biji buah limau susu

Cara-caranya:-

Masukkan buah dan gula serta air limau susu kedalam blender dan kisar sehingga hancur..
Keluarkan dan sajikan bersama roti telor.

Kalau mahu lebih masam lebih kan air perahan limau itu.
Rasanya mesti masam dan manis..

Kek Prune dan Kekacang



Kek ini rasa nya manis dan masam, masam kerana rasa buah Prune. Kek nya rasa lembap dan manis nya sederhana aje...Resepi diperolehi dari Suria.sg



Bahan-bahannya:-

2 cawan tepung naik sendiri
4 biji telor
1 cawan gula halus - nak manis sikit boleh tambah
250 gm mentega
3 sudu makan jam Aprikot
3 sudu makan badam hiris
1 sudu makan kulit buah oren

250 g buah Prune - delmonte -dipotong 4
1 cawan walnut - dicincang
1 1/4 cawan krim segar
1/2 cawan jus oren

Cara-caranya:-

Pukol mentega dgn gula sehingga kembang. Masukkan telor sebiji demi sebiji sehingga habis.
Masukkan parutan kulit buah oren dan jus nya sekali, kacau sehingga sebati.
Masukkan Jam aprikot, kepingan badam, walnut dan krim segar. Kacau sehingga sebati.
Masukkan tepung dan kacau sambil masukkan buah prune. kacau rata-rata dan tuangkan kedalam acuan kek.
Bakar dalam suhu 175 selama 40 minit atau sehingga masak.

Mee Jan Kueh - Apam Balik


Mama buat kuih ini untuk sarapan petang. Mama mengguna Betty Saw nya resipi..Mama suka kuih ini dengan bertoppingkan jagung , kacang, dan gula.Tetapi untuk anak bujang Mama, mama tambahkan Coklat Peanutbutter skippy nya.. Lazat kata Anak bujang Mama..Satu adunan Mama dapat 11 keping. Mama menggunakan acuan tembaga besi yg kecil size nya.

Kalau digerai atau warung ianya dijual $1.00 sekeping itu pun hanya Gula, kacang dan jagung..kalau nak coklat, blueberri atau etc.. kena tambah duit lagi 0.30 hingga ke 0.60 sen..

11 keping , kalau dibeli mau nya $11 dollars.. wah... baik buat sendiri... lagi jimat kan..Hehehehe...



Resepinya:-

150 g Tepung self raising flour- diayak dgn 1/2 sudu teh serbuk soda bikarbinot
20g gula castor
1/4 sudu teh garam
1 biji telor- dipukol dengan garfu
125 ml air disatukan dengan 125 ml susu segar
30 g mentega - dicairkan disejukkan
1 sudu teh air alkali

Kacang tanah disangai dan dikisar secara asar sedikit.
Gula halus sekucop nya
Jagung berkrim secukup nya.

Cara-caranya:-

Masukkan bahan2 kering kedalm mangkuk besar bersama gula dan garam.
Kacau sampai sebati.
Campur telur dan air dan susu serta kacau sedikit dan masukkan kedalam adunan tepung. Pukul sampai licin dan sebati.
Masukkan mentega cair dan kacau lagi.
Bubuh air alkali dan kacau lagi. Tutup mangkuk adunan dan biarkan ia nya selama 1 jam.
Panaskan kuali Apam atau kuali kecil.
Oles minyak masak sedikit disekeliling kuali dan masukkan 1 senduk kedalam kuali itu dan di pusar-pusarkan kuali itu dan biarkan sampai ia nya masak. baru boleh ditaburkan kacang , gula dan jagun kedalam nya dan lipat dua .
Angkat dan sajikan.

German Chocolate Almond Cake


I made this cake because I like the taste of almonds and richness of chocolates( I use dark chocolates) in it. Taste it if you all able to get hold of the recipe.

There is nothing better than a mouth watering piece of chocolate cake... I and my family like it because it is not so sweet.. less sweet better then too sweet..hmmm..gonna have a bite right now...so whoever loves chocolates.. do try and bake it..

I'm sure you will loves it....Cheers...!!

The recipe


Ingredients

125g President unsalted butter-chopped
75g cake flour
125g chocolate-double-boiled until melt (try to get dark and sweet chocolate)
130g icing suga3 eggs
60ml fresh milk
125g ground almond nut

Chocolate Butter frosting:

125g Unsalted butter- I use SCS butter
125g Cooking Chocolate
Some almonds and coconut dessicate

Methods:

Preheat oven at 180'c
Grease a any shape of 7' cake pan.
Combine all the ingredients and mix till light and fluffy.
Stir in ground almond
Pour cake mixture into cake pan. bake for 1 hour . remove, let it be for minutes and turn into wire rack for cool.
Mix butter and chocolate in small a bowl for double-boil and stir until Chocolate are melts.
Spread Chocolate butter cream on top of the cake and sprinkle some almond and coconut on top of the cakes.



Just a little notes..I do not use coconut for topping..Just toasted peanut...:-)

Mee Sua Fishballs


Dinner kali ini Kita makan Mee Sua Fishballs...dengan cuaca yang panas walaupun hujan turun dengan lebat sekali sekitar 20 minits...pun tidak meghilangkan bahang panas...
Mee Sua ini selalu nya kita nampak orang-orang cina makan, dan Bonda Mama pun suka masak mee ini..lembut dan sesuai untuk orangtua yg tidak ada gg..senang bagi mereka nak makan...cuma mee nya cepat kembang.
Mama makan mee ini dengan cilipadi ditumbuk kasar-kasar sedikit dan tuangkan kicap manis dan perahkan limau sambal sebiji..isk sedap.com youuu....!!
Dan masak Mee ini tak payah bubuh garam terlalu banyak... kerana Mee nya dah ada rasa garam...Less salt is better then More salt ...hehehe..:-D

I make this Cupcakes for my Little Hafiz..he keep asking for Dracula fondant Cupcakes which he saw it at my collection books. As I told him Mummy never made or easy to told him That Mummy never know this fondant skill...."sigh' and he grumbling saying can I have Cupcakes ...???

Braised Chicken


Braised Chicken

I cooked this dish and I find it that it's so delicious and very easy to cook. Just braised it in slow fire and let it be around 45 to 1 hours..The gravey we can use for wanton noodles or chicken rice sauce...
beside this dish, My Mum did taupo us prawn in chillies( Sambal Tumis Udang)so it can be consider complete meals.Hehehe..Thank you Mum for delicious Dish..:-D Thank to Gina-KC for the recipes

Panna Cotta




I make this and find it very easy to make and very delicious...in future I will like to try using Mango or fruits.....Thank to Joe


INGREDIENTS

1 cup of milk
1 cup of cream
1/2 cup of sugar
1 tspn gelatin
1/2 tspn vanilla Essence

METHODS

Combining the milk,cream, sugar and vanilla in a saucepan
whisk to combine
Place the pan over medium-high heat and bring the mixture brieflly to the boil, then allow it to sit for ten minutes to cool and allow the flavors to blend.
Sprinkle in your gelatin
and whisk thoroughly to incorporate it.
Strain through a fine mesh seive...
Ladle it into your molds and chill at least two hours or overnight.

Buttermilk Biscuits



Ingredients:

3 cups all purpose flour
2 tablespoons sugar
4 teaspoons baking powder (I less it to2)
1 teaspoon salt

1 teaspoon baking soda
3/4 cup unsalted butter, chilled, cut into 1/4 inch pieces
1+ cup buttermilk


Method:

Preheat oven to 180'C

Whisk flour, sugar, baking powder, salt and baking soda in large bowl to blend.

Using fingertips, rub 3/4 cup chilled butter into dry ingredients until mixture resembles coarse meal. Add buttermilk and stir until evenly moistened.

Using 1/4 cup dough for each biscuit, drop biscuits onto baking sheet, spacing 2 inches apart.

Bake until biscuits are golden brown on top, about 15 minutes. Cool slightly. Serve warm.

Kuih Bakar Pisang


Kuih ini adalah traditional melayu. Ia boleh dipelbagaikan seperti jagung, durian, labu, cempedek, nangka dan sebagai nya.
Kali ini Mama menggunakan Pisang. Pisang berangan menjadi pilihan Mama. Masak dan ranum amat sesuai untuk membuat Kuih Bakar ini....
Kuih ini akan Mama santap dengan famili pada waktu 4 petang ini...


Resepi nya: Dari Azizah Mohd Ismail


500gram Tepung gandum
800ml santan dari 11/2kelapa parut
1/2 sudu teh garam
1/2 sudu teh pewarna kuning
1/2 sudu teh esen vanilla
300 gram pisang
200ml air
5 biji telur
500 gram gula halus (caster0

Cara-caranya:

Pisang dibuang kulit nya dan dikisar dengan sedikit air.
Acuan muffin atau baulu di gris dgn minyak dan ketepikan dahulu.
Pukol telur dgn gula seingga kembang.
Masukkan santan,garam,vanilla, pewarna kuning, tepung dan pisang.
Pukol lagi sampai halus kemudian ditapis.
Panaskan ketuhar170-180darjah C, kemudian panaskan acuan-acuan kecil atau baulu yg hendak digunakan.
Tuang adunan kedalam acuan 3/4 penuh Bakar sehingga kekuning-kuningan dan masak.

Sambal Tumis Udang Kering


Sambal tumis Udang kering, enak dimakan dgn Roti Boyan atau sebagai sambal sahaja. Tidak terlalu masin dan rasa nya pedas, manis dan masam.
Bila lihat di prtiais box ada sepaket udang kering.. mula datang kerajinan membuat ia nya sebagai inti pada Sambal Tumis... dan kalau angin lagi "R" bolehlah Ku buat mee bandung kak Fatcheek..menarik sungguh mee bandung nya.....

Sahut Cabaran Buat Kek



Mama sahut cabarn dari Dapurarang...Membuat sebiji kek dari tema Red Velvet Cake...Sahler Mama nervous tau tapi Happy sangat kerana Mama mencuba juga skill deco ini..Walaupun memang tak ada skill deco mendeco Mama mencuba juga.. Hasil nya sebiji kek sudah siap dan walaupun tak cantik tapi rasa nya sedap.. Yummy... jadi selepas ini apa pula eh cabaran...



Red Velvet Cake:
~~~~~~~~~~~~~

2 1/2 cups (250 grams) sifted cake flour
1/2 teaspoon salt
2 tablespoons (15 grams) Dutch-processed cocoa powder
1/2 cup (113 grams) unsalted butter, at room temperature
1 1/2 cups (300 grams) granulated white sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup (240 ml) buttermilk
2 tablespoons liquid red food coloring
1 teaspoon white distilled vinegar
1 teaspoon baking soda


Cream Cheese Frosting:

1 1/2 (360 ml) cups heavy whipping cream
1 - 8 ounce (227 grams) cream cheese, room temperature
1 - 8 ounce (227 grams) tub of Mascarpone cheese, room temperature
3/4 teaspoon pure vanilla extract
1 cup (115 grams) confectioners' (icing or powdered) sugar, sifted


Method:

Red Velvet Cake:

Preheat oven to 350 degrees F (175 degrees C) and place rack in center of oven.
Butter two - 9 inch (23 cm) round cake pans and line the bottoms of the pans with parchment paper. Set aside.

In a mixing bowl sift together the flour, salt, and cocoa powder. Set aside.

In bowl of your electric mixer, or with a hand mixer, beat the butter until soft (about 1-2 minutes).
Add the sugar and beat until light and fluffy (about 2-3 minutes).
Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl.
Add the vanilla extract and beat until combined.

In a measuring cup whisk the buttermilk with the red food coloring.
With the mixer on low speed, alternately add the flour mixture and buttermilk, in three additions, beginning and ending with the flour.

In a small cup combine the vinegar and baking soda.
Allow the mixture to fizz and then quickly fold into the cake batter.

Working quickly, divide the batter evenly between the two prepared pans and smooth the tops with an offset spatula or the back of a spoon.
Bake in the preheated oven for approximately 25 - 30 minutes, or until a toothpick inserted in the center of the cakes comes out clean. Cool the cakes in their pans on a wire rack for 10 minutes. Place a wire rack on top of the cake pan and invert, lifting off the pan. Once the cakes have completely cooled, wrap in plastic and place the cake layers in the freezer for at least an hour. (This is done to make filling and frosting the cakes easier.)

Cream Cheese Frosting:

In your food processor, or with a hand mixer, process the cream cheese and mascarpone cheese until smooth.
Add the vanilla and confectioners sugar and process until smooth. Transfer this mixture to a large mixing bowl.

Then, in the bowl of your electric mixer, or with a hand mixer, whip the cream until stiff peaks form.
With a large spatula, gently but quickly fold a little of the whipped cream into the cream cheese mixture to lighten it.
Then fold in the remaining whipped cream, in two stages.
If the frosting is not thick enough to spread, cover and place in the refrigerator for an hour, or until it is firm enough to spread.

Assemble: With a serrated knife, cut each cake layer in half, horizontally.
You will now have four cake layers.
Place one of the cake layers, top of the cake facing down, onto your serving platter.
Spread the cake layer with a layer of frosting. Place another layer of cake on top of the frosting and continue to frost and stack the cake layers.
Frost the top and sides of the cake. Can garnish the cake with sweetened or unsweetened coconut

Makes one - 9 inch (23 cm) four layer cake.

Savoury Carrot & Zucchini Loafs


Mama buat loaf ini untuk tambahan sajian masakkan Mama. Boleh dipanggil Cemil-cemilan... Mama mendapati resepinya disebuah majalah omputih dan telah mencuba nya...Walllaaa...sedap dimakan dengan sambaltumis atau chilli sos bersama salads..

Resepi nya:-

200gm Zcchini

1/2 Carrot

1 meduim onion diced

1 cup Chicken Ham - yang ini Mama gantikan ke daging kisar, yg disangai dgn rempah ratus dan sangar sehingga lembab tidak kering

1/2 cup cheddar cheese

2 eggs- lightly beaten

1/2 cup self-raising flour- shifted- Mama gunakan Tepung gandum dan di shift dgn sedikit Baking Powder2 X

1/2 tsp salt

1/2 tsp pepper

1/4 cup olive oil

Methods:-

Preheat Ovens to 180'C

Grease 2 small loaf tins and put aside.

Grated Zucchini and carrots coarsely. Place together in deep bowl.

Mix the remain ingredients and pour Olive oil and mix well.

Fold in the shifted flour and mix well until well incorporated.

Pour into the loafs Tin and bake for 25 to 30 mins or batter is cook right through.

Serve with salads and your favourite sauce...

Creamy Ocean Pies



Mama buat Ocean Creamy pies setelah melihat nya begitu cantik di sebuah Forum. dan setelah ia menguji kesabaran Mama, akhir nya Mama buat tadi untuk minuman petang disamping Keluarga tercinta...




Resepi:-


Ingredients

1 pc of Sutchi Fillet(defroze)
6 pcs Tiger prawns(remove shells, devein)
6 pcs Crabsticks
1 can of Cream of Chicken Soup(I use Campbell's)
1 can of button mushrooms
half cup of frozen vegetables
1 medium red onion(chopped)

Topping

3 potatoes
50g butter(salted)
pinch of salt
50g Mozzarella cheese(shredded)
50g Cheddar Cheese(shredded)

Method for fillings

1. Cut fish fillet, prawns, crabsticks into thick chunks.
2. Heat up wok with 1 tbsp of olive oil.
3. Add onions to saute till soft.
4. Add seafood chunks, frozen vegetables, button mushroons and canned soup to fry till well mixed.
5. Turn off heat and set aside to cool.

Method for toppings

1. Boil potatoes till soft.
2. Peel away the skin, mash while its still hot.
3. Add butter and salt to stir and mix.
4. Add cheese and stir till cheese is melted.

Method for assemble
1. Fill each cup with fillings. Fill upto 50% full.
2. Spread 2 to 3 tbsp of topping on top.
3. Preheat oven to 200C
4. Baked in the oven for 15 mins or until the top is slightly brown and crusty looking.

Serve immediately.

Red Tomato Jam







Red Baby Tomato Jam

Dari Simply d'lite


Ingredients:

Red baby tomato

Gula - secukup rasa
Jus lemon - secukup rasa

*Sedikit Air
*Sedikit daun basil


Directions:

Larutkan tomato bersama air hingga agak layu dan hancur, kemudian masukkan gula dan jus lemon.
Masak hingga larut dan agak pekat. Akhir sekali masukkan daun basil.

Daging Jintan



Daging Jintan bukan Jintan aje yang ada didalam nya, pelbagai rempah ada begitu juga dengan ladahitam , semua sesudah disangar ku blend dan tumis sampai keluar minyak...
Ku suka keharuman rempah-rempah ini. Selepas itu ku masukkan daging dan ku biarkan sampai ia nya empuk baru ku taburi garam , gula dan ku kacau sedikit dan ku perlahan kan api sekecilnya dan ku lalu tinggalkan buat seketika...
Sempat ku habiskan gsok baju dan datang semula untuk melihat lauk yang ku masak ini...
Isk..dah cukup pekat dan apa lagi ku angkat lauk nie dan ku pun mulakan tugas mengambil gambar nya...
Keputusan nya... enak dimakan dgn nasi hangat-hangat ia nya kurang pedas jadi sesuai kalau ada sambal belachan...:-)

Ayam Goreng Tepung


Mama menggunakan isi ayam bahagian peha, kerana ia nya amat lembut dan sesuai sekali untuk anak-anak nya gigi dan berkunyah.
Buat untuk tambahan pada menu makanan dan ia sungguh enak dicecah dengan Mayo dan tomato sos...

Resipinya

1/2 kilo isi ayam- dipotong agak-agak 1inchi, cuci dan tos kering
1 sudu makan serbuk buah pala
1 sudu makan rempah kari daging
1 sudu makan serbuk kayu manis dan kawan nya (harap fahamlaa)
1/2 sudu makan serbuk kunyit
sedikit garam dan gula
5 sudu makan tepung jagung - tak cukup boleh tambah lagi tapi Mama suka tepung nya tipis aje
Minyak masak secukup nya.

Cara-caranya:-

1 Perap ayam dengan semua bahan serbuk kecuali Tepung dalam masa 1 jam.
2 Buang air perap nya dan golekkan di dalam tepung jagung.
3 Panaskan minyak dan goreng di dalam minyak yang banyak dan api nya sederhana.. Angkat dan tos serta sajikan dengan Sos kesukaan Anda.

Ayam Seaweed


Ayam Seaweed nak beli diluar mahal tau...jadi Mama cuba sedaya yang boleh.. cemil-cemilan ini untuk penambah makan malam kita... :-) Walaupun tak sama dengan Chicken seaweed tapi setelah dibaluti dengan seaweed.. Senyum lebar anak-anak nya senyuman..

Oreo Butter Cake


Oreo Butter cake..very soft and delicious.. I eat this for our Breakfast....Yummy..


Ingredients:

250 gm Butter
230 gm Sugar
4 Eggs
250 gm Self-raising Flour
2 tspn vanilla essence
6 Tblspn Milk
200 gm Oreo Cookies (clear the cream)

Methods....

1 Heat oven to 200 deg C. Line cake tin, size about 8 inches in diameter.
2 In a mixer, beat butter and sugar till white and fluffy.
3 Add in eggs one at a time, alternating with flour.
4 Add vanilla essence , milk andOreo cookies into it and stir lightly.
5 Pour into baking tin and bake for about 45mins.

Our Tea-Time
